Choose Table from island Add or from Add Above / Add Below. Click a cell to type. Cell editing stays inside the table — it does not become a new Notes line.

Tables sit among headings, to-dos, and other layout items. Duplicate or restyle the whole item from the line context menu. For a structured list of Docs, use the Docs or Tasks tab instead.
